    Yeah brother ...Let the good times roll ! Two things...you are correct on your beans and second stick with the spices your using cause Penzey's is great or make yer own....any of that other stuff has waaaay too much salt added to it. Rockit G !!

    Also...Chef Paul Prudhome RIP always suggested using Garlic and Onion powder with your existing O and G. He says it punches up the natural ingredient. Seems to work actually go fig.

    Love beans, red beans, black, white. Lovely dish you got there. Smoked pork products, hocks etc. are a must for any good bean dish. Bon apetite.

    Always great to see Red Beans & Rice getting a shout out.

    For many who live/have lived in New Orleans it is the traditional Monday dinner.
    Monday was wash day and the pot of RB on the back of the stove saved time for laundry.

    To this day when I order it when I'm with friends from NOLA they always comment "but it's not Monday!"

    And I'm from the water soak/drain cook with chicken stock (or home made and frozen turkey stock) school - but its all good...

    I lived in New Orleans in the mid 1960s. Ate a lot of red beans & rice, and drank plenty of chicory. That is a great looking dish there G .........

    Do you soak your beans first or do you just throw them dry in the pot and let flatulence free range? Har!!

    All kidding aside though Red/Kidney beans are actually toxic if not cooked correctly

    Red Kidney Bean Poisoning is an illness caused by a toxic agent, Phytohaemagglutnin (Kidney Bean Lectin). Different types of lectins are found in many species of beans, but are highest in concentration in red kidney beans. The unit of toxin measure is the hemagglutinating unit (hau).

    I was always told that soaking overnight and a 15 minute hard boil BEFORE adding to any dish makes them safe for both problems

    I lived there for 2 years. The little shop in the Tidewater Bldg had great Red Beans, rice and sausage on Mondays.
