Yeah, that works for deburring a blade and I used to do that all the time 20 or so years ago.
Then one day I was doing it to a Japanese style knife and sliped and cut a half inch deep slash across my thumb pad. That ended me doing that as a final after hone ritual.
If you are going to do that I would use a bowl turned upside down on the counter and keep your other hand away.
There are too many good hones out there to use so don't risk damaging your razor on a plate or bowl.

My wife does few strokes on the bottom of a coffee mug almost every time she takes a clean knife from a drawer. It really works.
