    Default Kitchen Knife at Goodwill.

    so I was at goodwill today, and I was looking for kitchen knives... I came across one that had some nice patina to it, and I flicked the spine and it sounds like about grade 6 steel. Anyway, it was a LOT harder than the cheap, stamped Chinese steel that some of the other knives in the drawer were made of and a lot harder than the knives we have at home...

    it is stamped with "VERITABLE ~ BRESDUCK/ SABATIER ~ PARIS, FRANCE" the ~ denotes a jump around a logo, and the / denotes a new line. Under the logo it says "Chef au Ritz." the Logo is a furiously mustachio-ed face with a chef's hat. pictures below...

    I can't really find a lot on it online... its about an 10" (~.25m) blade with an about 15" (~.43M) overall length. I did little bit of restoration on it... I hit it with 600 grit sandpaper for about 30 seconds... :lol:

    Any info from the wizened old sages of SRP?

    Sabatier is a nice knife. I've got one and its a bit to hone, but lovely to cut with. Polish it up.....

    Sabatier is now owned by TI.
    they are quality knives.

    Wait... I thought Sabatier was the style of knife... I've seen "sabatier" on at least 3 marks of knives. Bresduck, TI and a third one I didn't recognize. Is it a brand or a factory or something? I'm just looking for more information... I've only been able to find one other Bresduck sabatier knife online.

    Currently it is a brand and it was acquired by TI. I do not know about vintage pieces, but I have never heard of them being made by anyone else but Sabatier, I believe it has always been an old French brand of cutlery.

    It's a knife/cutlery maker. Always has been, as far as I know. A number of years ago, as Sabatier was being sold, Lee Valley was able to purchase the North American rights to sell the knives. If I remember correctly, they purchased a bundle of them, and then began etching their own logo on them. Now they say "Lee Valley" on the blade, but underneath is the elephant and the stars.

    This is from a website selling genuine Sabatier's right now:

    Thiers-Issard have been hand-crafting knives in Thiers France, under the Sabatier brand with the **** Elephant logo, since 1884. Forged out of a single blank of steel, Thiers-Issard Sabatier knives, with their full tang, provide the perfect balance and alignment for comfortable use all day long. Sabatier Elephant logo Stainless Steel knives provide the quality and accuracy French chefs demand, while remaining bright, easy to clean and maintain. These knives are available with three handles, a red stamina handle, which is an epoxy impregnated wood that simulates rosewood, white micarta (epoxy impregnated wood) and solid olive wood. The red stamina and white micarta handles are more water resistant and require less care than the olive wood handles, but it would be hard to imagine a more beautiful traditional handle than the olive wood ones.
