I like what your doing here. we need to talk.Good stuff, for the most part... this is the proof that most distillers barrel age.
For best flavor and boutique dilute to 80 proof.
I age mine on toasted oak chips at 90 proof for 6 months and then transfer to a charred oak barrel for an additional couple of years to get the same quality and flavor as a 20 year aged bourbon... Of course I also discard more of the foreshots and head than necessary.
You should try making your own one of these days, you'll never want to buy the store bought stuff again.View attachment 426
